Quick and Easy Dinner

This recipe is very easy and quite tasty. My family loves it. Check your pantry, I'm sure you already have the ingredients, so no unplanned trips to the grocery store. (I like that!)

Rotel Chicken

Chicken breast, boiled and cut-up
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
1 can Rotel
1/4 lb Velveeta, cubed
Onion to taste, chopped

Mix all ingredients together in a microwave safe casserole dish. Do not cover.
Microwave (about four minutes at a time), stirring frequently until cheese is melted.

Prepare rice as directed on box.

Serve over rice.

DO-AHEAD: Boil chicken, cut up and place in freezer bag. Place freezer bag in water to thaw.
Chop onion and place in baggie or small container.

I hope you enjoy this recipe as much as we do. It's fast and easy, especially if you have cooked chicken in the freezer just waiting to be used. This recipe is great for those evenings you come home a little later than usual and you have no idea what to feed everyone. Enjoy!

Egg Shells

A lesser-known way to attract birds is by putting out eggshells. Female birds, drained of calcium by egg-laying, eagerly consume them.
I save and rinse our eggshells, then let them air dry. I put them into a zip lock bag after they dry and crush them up. Add them to your birdseed or spread them on a platform feeder, patch of bare ground, or even a rock. Watch the birds, they love them!
